Ridiculicious

The past couple of weeks I've been craving something cheesecake and surveying recipes for a treat that I can portion and freeze. My mantra the past several years:  portion and freeze, portion and freeze.

I decided to try the Cappucino Cheesecake Bars from Epicurious. I followed one of the reviewer recommendations and did an Oreo cookie crust. Definitely the way to go. Chocolate. Cream cheese. Espresso. Ridiculicious.


At room temperature these bars are phenomenal. Actually I sampled them while they were still just a little warm. I couldn't wait any longer. They satisfied mightily, but I have a hunch that they will be even better out of the freezer.
Something to look forward to if summer ever gets here!
