The Cake Bible. A super simple classic recipe that I returned to last week after ages apart only to find it hasn't aged at all. The cake whips up in a jiffy and keeps wrapped in plastic for five or six days = perfect snacking. Next time I think I will add a teaspoon of fleur de sel to the batter. Or maybe not. No point in messing with perfection.
